Breads

  • Sourdough
    • Naturally leavened sourdough made with organic bread flour, organic whole wheat, and a bit of organic rye. It's got enough sour kick to remind you it's sourdough, and enough whole grain to know you're doing what's best for your body.

    • Made with Organic Bread Flour, Filtered Water, Organic Whole Wheat Flour, Organic Rye Flour, and Sea Salt. 25% Whole grain.
  • Whole Wheat Multigrain
    • Whole wheat bread made with whole wheat and bread flour and a special 9-grain/seed mix. It's flavored with a touch of sourdough and local sorghum.

    • Made with Organic Whole Wheat Flour, Organic Bread Flour, Filtered Water, Chemical-Free 9-Grain/Seed Mix (Hard Red Wheat Berries, Hard White Wheat Berries, Oats, Soft White Wheat Berries, Spelt, Flaxseed, Rye, Triticale, and Barley), Local Sorghum, Sea Salt, and Yeast. 50% or more whole grain.
  • Caraway Rye
    • Whole Rye flour and caraway seeds infuse the flavor that we've all come to associate with rye bread. It's started by fermenting 100% of the rye flour with a sour levain 16 hours before baking. Light enough for a sandwich, but flavorful enough to eat on its own.

    • Made with Filtered Water, Organic High Gluten Flour, Organic Whole Rye Flour, Caraway Seed, Sea Salt, and Yeast. 40% whole grain.
  • Oatmeal Raisin
    • Definitely a favorite of ours, this smooth bread gets its amazing texture from a splash of whole grain rolled oats with a sweet finish from the organic raisins. Truly a great breakfast bread.

    • Made with Organic Bread Flour, Filtered Water, Organic Raisins, Organic Whole Wheat Flour, Organic Rolled Oats, Sea Salt, and Yeast. 30% whole grain.
  • Walnut and Raisin Rye
    • This bread's so good you might end up eating it for dessert. We've never had this loaf last over 24 hours in our house.

    • Made with Organic High Gluten Bread Flour, Filtered Water, Organic Whole Rye Flour, Organic Raisins, Walnuts, Sea Salt, and Yeast. 35% whole grain.

  • Granola Bars
    • A Covert Cupboard sensation, the Granola Bar. Invented by our own Michelle, these are gluten-free, dairy-free, soy-free, vegan and still full of flavor. It's like a meal in a bar.

    • Made with Organic Rolled Oats, Eco-Farmed Brown Rice Syrup, Organic Peanut Butter (from Eastwinds), Organic Raisins, Organic Dates, Organic Oat Bran, Almonds, Organic Flax, and Organic Coconut.
  • Power Muffins
    • A Farmer's Market Classic by Eric Tumminia in the summer of 2008 is becoming a part of the Covert Cupboard lineup. The Power Muffin is an entirely whole-grain muffin bulked up with oat bran and sweetened with Local Sorghum. When fruit is in season again, you can be sure we'll throw local sweets like Lost Branch Blueberries into those muffins.

    • Made with Organic White Whole Wheat Flour, Organic Soymilk, Organic Wheat Bran, Organic Raisins, Local Sorghum, Canola Oil, Baking Soda, and Sea Salt.
  • Scones
    • I know it doesn't seem possible, but Michelle has come up with another whole-grain good that seems to have dropped out of heaven's bakery into your hands. It's moist, light, sweet, but still has the heartiness of a scone. The scone type is also seasonal, based on whatever local berries are available.

    • Made with Organic White Whole Wheat Flour, Local Sorghum, Canola Oil, Organic Soymilk, Baking Soda, Sea Salt, and Vanilla Extract.

All our breads are made with 100% Organic flour from Heartland Mill in Kansas. They're the closest mill we've found that uses local farmers to produce as much of their flour as they can. Also, the company was started and is still owned by local farmers that decided way back in 1989 that conventional planting methods were ruining their soil quality. They switched to organic farming methods before the trend started. We think they're doing things the right way.

Our ingredients are nearly all domestic (Made in the USA), except for the bit of coconut in the granola bars (we're planning on revising the recipe to eliminate this), any cinnamon we use, and the vanilla in the scones. Everything else, you can rest assured is USA grown.

We never use any refined sugars. All our products are sweetened with local Organic Sandhill Sorghum or Dave Hoover's Sorghum from Rich Hills, Missouri, and for the granola bars, Lundberg Farm's Eco-Farmed Brown Rice Syrup. We only make food that we would eat too, and we're pretty picky.
